oday is teacher appreciation day at Molly’s school so we decided to make our “Holiday Potatoes” for the potluck. We make these every year and they are always a family favorite. Seriously guys, you will have family and friends request that you bring this dish to every potluck, holiday party or just because. It is super easy and inexpensive to make and can feed a lot of people. Molly and I hope you love them.


HERE’S WHAT YOU NEED:

  • 2 lbs frozen hash brown potatoes, thawed
  • 2 lbs of Jimmy Dean sage sausage, browned
  • ½ tbsp parsley
  • ½ tbsp rosemary
  • ½ tbsp thyme
  • ½ tbsp basil
  • ½ tbsp garlic powder
  • Salt and Pepper to taste
  • 1 cup diced onion
  • 1 cup cream of chicken soup
  • 1 lb of sour cream
  • ½ stick melted butter
  • 8 oz grated cheddar cheese
  • 1 ½ cup of corn flakes or crushed potato chips

What to do:

In a skillet, cook the sausage until cooked through, drain the grease.
Mix hash brown potatoes, sausage, onion, soup, sour cream, butter, herbs, salt and pepper and grated cheese. Place in 9 x 13- inch pan. Cover with crushed chips or corn flakes and bake at 375 degrees for an hour. Enjoy.
