I’m really trying to focus on eating healthier this year, which means I have to limit my carb intake. Being an Irish mid-western girl, its only natural that I love mashed potatoes. A friend had suggested making mashed cauliflower in place of potatoes, telling me that it really tastes like mashed potatoes, so, I decided to try it. I will say that I really enjoyed them. This mashed cauliflower recipe really did satisfy my craving and I will most definitely be making these again. I added some peas and soybeans to the mash for a pop of St. Patrick’s day color. So if you are trying to limit your carbs, give this recipe a try—I think you might just love it.


WHAT YOU WILL NEED

  • 1 head of cauliflower, trimmed
  • 2 cup reduced-sodium chicken broth
  • 2 tablespoons butter
  • ¾ cup frozen peas
  • ¾ cup frozen soybeans
  • 3 chives chopped
  • 1/3 cup of half and half
  • Salt and pepper, to taste

Preheat oven to 425 degrees.

Cut the cauliflower into bite-sized pieces and add to a pot of chicken broth. Boil the cauliflower for 25 minutes until it is soft. Drain the cauliflower and return it back to the pot. Mash the cauliflower to the consistency you like. Add the remaining ingredients and place in a baking dish.

Place in the oven for 15-20 minutes covered and serve.
