A really simple way to brighten up a dessert is by making a batch of homemade mint whipped cream. It’s a sure way to send any dessert or coffee over the top. I like to make this mint whipped cream and store it in the fridge for my morning coffee—it’s an indulgent way to start the day. This is equally as good with my Blarney cookies recipe.   • 1 pint of chilled heavy whipping cream
  • 6 tablespoons of sugar
  • 1 teaspoon of mint extract

In a bowl add the cream, sugar and extract and begin to beat. Continue beating until stiff peaks form. Serve with my Blarney cookies or in your morning coffee for a minty sweet treat.
