Happy Mother’s Day weekend! I hope that all you moms out there are spoiled rotten and enjoy your time with your kids. Here’s a quick recipe for my asparagus, ham and cheese quiche that you can make the day before so you can enjoy Sunday kitchen-free!


  • 1 teaspoon salt
  • 1 cup half-and-half
  • 4 eggs
  • 1 9-inch single crust pie (you can use the pre-made one in the frozen section at the grocery store)
  • ¾ cup of chopped asparagus
  • ½ cup of diced ham
  • ½ cup of shredded cheddar cheese
  • ¼ cup of diced onion

Preheat oven to 350°F. Beat together salt, half-and-half, and eggs in a medium bowl. Add the ham, cheese, asparagus and onion to the egg mixture. Pour ingredients into the piecrust, then bake in the preheated oven for 45 to 55 minutes, or until the surface is golden brown. Enjoy!
