I wanted to make a healthy, hearty salad and was in the mood for Italian, so I thought, ‘Why not combine the two and see what happens?’ I was so pleased with the results of this Chopped Italian Salad that it will definitely become a regular dish in our household. It’s healthy, filling and most importantly, delicious!
WHAT YOU WILL NEED
- Spring mix of greens (or your personal favorite blend), chopped
- 2 stalks of celery, chopped
- 2 carrots, chopped
- ½ can cannellini beans
- ¼ cup sun dried tomatoes, chopped
- ¼ cup goat cheese, crumbled
- 1 chicken breast
- 2 tablespoons Italian Seasoning
- 1 clove of garlic, diced
- Salt and pepper
- 1 tablespoon olive oil
Start off by marinating your diced chicken with Italian Seasoning and diced garlic. Warm the olive oil in a skillet and place the chicken into the pan. Cook until the juices run clear from the chicken (about 10 minutes depending on how small you dice your chicken). Next, toss all your ingredients into a bowl, adding the warm, cooked chicken to the mixture and tossing it all together with your favorite Italian dressing. Season the dish with salt and pepper, serve, and enjoy!
